Starters: I was treated to an array of sashimi featuring salmon, akami, and hamachi, each impeccably aged and sliced to order. My colleague savoured the yakitori of chicken with Tokyo onion, a dish that is a seasonal triumph in its own right.

Mains: The beef dish with celeriac, soy, and beef dashi was described by my colleague as one of the most tender she has ever experienced. As for myself, the salt-aged duck teriyaki, accompanied by sesame, pak choi, and a gyoza, was a revelation in texture and flavour.

Desserts: The finale was a berry sorbet for me, harmoniously paired with Punotto Moscato D'Asti 2022, and for my colleague, the Sudachi—a crunchy meringue complemented by blackberry gel.
